Kick-Ass 2 — Hit Girl Veggie Plate and Breakable Sugar Glass
Perfect for your next party: snacks inspired by Kick-Ass 2. We've got a Hit Girl-colored vegetable plate paired with a sheet of breakable sugar glass, just perfect for smashing over the head of a special someone. ;)
Supplies
- Purple potatoes (1 kilogram)
- 1 egg yolk
- 1 tablespoon of Dijon mustard
- 1 lemon
- Almond oil, or a flavourless oil (150 milliliters)
- 1/8 of a red cabbage
- 2 beetroots, cooked
- A handful of fresh parsley, roughly chopped
- A handful of pine nuts, toasted
- A chunk of Parmesan, finely grated
Steps
- Slice the potatoes in half lengthways and chuck them into a saucepan of salted water.
- Boil the potatoes for 15-20 minutes, until soft all the way through then drain and set aside to dry.
- Zest the lemon.
- Whisk one of the egg yolks with the mustard, a squeeze of lemon juice, and the lemon zest.
- Continue to whisk as you slowly drizzle in the almond oil until it thickens and the mayonnaise turns light and thick.
- Slice the cabbage finely and dice the beetroot into small cubes (.5x.5 centimeters).
- Toss the warm potatoes with the mayonnaise, cabbage, beetroot, parsley, pine nuts and Parmesan.
- Pile the potatoes in the middle of 4 plates and scatter over some extra nuts, Parmesan and parsley.
- Serve your purple salad when ready!

- Sugar (395g)
- Liquid glucose (170g)
- 1/4 teaspoon of cream of tartar
- Water (250 milliliters)
- A sugar thermometer
Steps
- Line 2 large baking trays with foil.
- Chuck the sugar, liquid glucose, cream of tartar and water into a large saucepan over a medium high heat.
- Heat the mixture, whilst stirring, until it reaches 300°F (150°C). It will take a while and will reduce a lot.
- Pour the molten sugar over the lined baking trays very carefully when it reach 300°F (150°C) and tilt the trays to get a very thin layer of 'glass'.
- Set aside at room temperature for a few hours to ensure it sets.
- Very carefully peel the foil away from the sugar glass.
- Destroy your sugar glass in any way you want (avoiding eyes)!
