Guy takes a trip to Maroubba Beach and makes a great vegetarian dish - spicy lentil lettuce wraps.

Spiced Lentil Lettuce Wraps

Ingredients

  • 100 grams dryer porchini mushroom

  • 2 liters veg stock

  • 1 tablespoon coriander seed

  • 1 tablespoon fennel seed

  • 1 teaspoon dried chilli

  • 1 tablespoon dried oregano

  • 1 onion

  • 1 red capsicum

  • 1 garlic

  • 2 zucchinis

  • 4 mushrooms

  • 1 cup lentils

  • 1 fresh chilli

Instructions

  1. In a pod add all dry ingredients together and infuse into veg stock

  2. Dice all veg and fry till tender in a large pot.

  3. Add lentils to pot and coat in veg then add infused veg stock and cook till lentils are soft, about 20min medium heat.
