Delicious summer party dish: Shrimp bake filled with clams, kelbasa, corn, potatoes and of course shrimp. All inspired by one of my favourite movies: Forrest Gump.
A large pot
3 garlic cloves chopped
1 large onion diced
Salt and Pepper
Dry white wine
10-12 new potatoes cut in halves
8 thick slices of Turkey Kelbasa
3 cobbs of corn
1.5 pounds peel on shrimp
Drizzle olive oil in a deep pot and place over medium heat. sauté your garlic and onion. Add a pinch of salt and pepper initially and then again at the end to taste. Layer in your potatoes, kielbasa, corn and clams. Pour over 1 cup of white wine and 1 cup of water. Close the lid and let the bake steam for 20-25 minutes. Check on the pot and once the clams have opened quickly throw in your shrimp, close the lid, turn off the heat and let the shrimp cook in the residual steam. This ensures that they don't over cook. You may have to stir them around slightly. Also add in a big spoon of butter and let it melt over the seafood.
Once finished, pour the broth into individual bowl for people to dip their bread into. I like to take the whole bake and pour it right out onto a plastic table cloth for people to pick and choose their favorite parts. Top with chopped parsley and serve with bread and lemon slices.
