Chocolate Quinoa Bites
These guilt-free bites are great for a mid-day sweet treat!
Supplies
- 1/3 cup quinoa, uncooked
- 2/3 cup water
- 1 cup dates, pitted
- 1/2 cup raw almonds
- 1/3 cup peanut butter
- 1/3 cup dark chocolate morsels
- 1/8 teaspoon sea salt
- 1/4 cup unsweetened shredded coconut for coating
Steps
- In a small saucepan, bring the quinoa and water to a boil. Cover and simmer until the water is absorbed (approximately 10-14 minutes).
- In a food processor, process the almonds until evenly chopped.
- Add the dates, cooked quinoa, sea salt, peanut butter and chocolate morsels to the food processor.
- Process until the mixture forms a ball.
- Using your hands, scoop out the mixture and form into approximately 1-inch balls. You will have 12-14 balls.
- Roll each ball in the shredded coconut to coat.
- Refrigerate for approximately 1 hour to solidify.
