
Ingredients
- 2 ripe avocados
- 4 eggs
- 1/4 teaspoon sea salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon chopped chives for garnish
Steps
- Preheat the oven to 425 degrees F
- Slice the avocados in half and remove the pit
- Carefully scoop out approx. 2 tablespoon. of the avocado flesh from the center of the avocado
- Place the avocados in a small baking pan and try to fit them tight next to each other
- Crack an egg into each avocado half
- Place in the oven and bake for 15-20 minutes, or until the egg whites have set
- Remove from oven and season with salt, pepper and chives
