• 2 ripe avocados
  • 4 eggs
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon chopped chives for garnish


  1. Preheat the oven to 425 degrees F
  2. Slice the avocados in half and remove the pit
  3. Carefully scoop out approx. 2 tablespoon. of the avocado flesh from the center of the avocado
  4. Place the avocados in a small baking pan and try to fit them tight next to each other
  5. Crack an egg into each avocado half
  6. Place in the oven and bake for 15-20 minutes, or until the egg whites have set
  7. Remove from oven and season with salt, pepper and chives
