Banana Walnut Waffles

Incorporate bananas and walnuts into your waffle batter in this healthy and filling breakfast recipe

Supplies

  • 1 1/2 cups whole wheat pastry flour
  • 2 tablespoon coconut sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup walnuts, chopped
  • 2 bananas, mashed, plus more for topping
  • 1/2 cup melted coconut oil
  • 3/4 cup unsweetened almond milk
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract

Steps

  1. Heat waffle iron on high
  2. Mash the bananas until smooth in a medium mixing bowl. Add the coconut oil, almond milk, egg and vanilla extract and stir to combine
  3. In a medium bowl, whisk together the flour, coconut sugar, baking powder, kosher salt, cinnamon and nutmeg
  4. Add wet ingredients to dry ingredients and stir until just combined. Be careful not to over mix
  5. Stir in the chopped walnuts
  6. Pour approx. 1 cup of the batter onto the heated waffle iron, enough to cover the center and most of the central surface area
  7. Repeat with remaining batter
  8. Top with sliced bananas and pure maple syrup. Makes 4-6 large round waffles
