
Ingredients
- 1 1/2 cups whole wheat pastry flour
- 2 tablespoon coconut sugar
- 2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup walnuts, chopped
- 2 bananas, mashed, plus more for topping
- 1/2 cup melted coconut oil
- 3/4 cup unsweetened almond milk
- 1 large egg
- 1/2 teaspoon pure vanilla extract
Steps
- Heat waffle iron on high
- Mash the bananas until smooth in a medium mixing bowl. Add the coconut oil, almond milk, egg and vanilla extract and stir to combine
- In a medium bowl, whisk together the flour, coconut sugar, baking powder, kosher salt, cinnamon and nutmeg
- Add wet ingredients to dry ingredients and stir until just combined. Be careful not to over mix
- Stir in the chopped walnuts
- Pour approx. 1 cup of the batter onto the heated waffle iron, enough to cover the center and most of the central surface area
- Repeat with remaining batter
- Top with sliced bananas and pure maple syrup. Makes 4-6 large round waffles
