Supplies
- 3 cups fresh cherries, pitted and halved
- 2 tablespoon spelt flour
- 2 tablespoon pure maple syrup
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon pure vanilla extract
- 1 cup rolled oats
- 1/2 cup raw walnuts, chopped
- 1/3 cup shredded coconut (unsweetened)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1 1/2 tablespoon coconut oil, melted
- 2 tablespoon pure maple syrup
Steps
- Preheat oven to 350 degrees F.
- Grease 2-4 ramekins with coconut oil and then set aside.
- Place cherries in a large mixing bowl, followed by the flour, 2 tablespoon. pure maple syrup, lemon juice, and vanilla extract. Stir to combine and then pour into the ramekins, filling approx. 2/3 full.
- In a separate bowl, combine the oats, walnuts, coconut flakes, cinnamon, and sea salt. Add the maple syrup and coconut oil, then stir to combine until evenly mixed.
- Sprinkle the oat mixture over the top of the cherries in the ramekins.
- Bake until hot and bubbly, about 20-25 minutes.
