- 10-12 whole unpeeled carrots, sliced lengthwise 1 tablespoon coconut oil
- 1 tablespoon orange juice
- 1/4 cup pure maple syrup
- 1 teaspoon fresh ginger, grated 1/8 teaspoon kosher salt
Steps
- Preheat oven to 400 degrees and line a sheet pan with parchment paper.
- Arrange carrots on sheet pan.
- Add the coconut oil, orange juice, syrup, fresh ginger, and kosher salt. Toss to coat. Roast in oven for 30-35 minutes, until golden and tender.
