Ingredients

  • 10-12 whole unpeeled carrots, sliced lengthwise 1 tablespoon coconut oil
  • 1 tablespoon orange juice
  • 1/4 cup pure maple syrup
  • 1 teaspoon fresh ginger, grated 1/8 teaspoon kosher salt

Steps

  1. Preheat oven to 400 degrees and line a sheet pan with parchment paper.
  2. Arrange carrots on sheet pan.
  3. Add the coconut oil, orange juice, syrup, fresh ginger, and kosher salt. Toss to coat. Roast in oven for 30-35 minutes, until golden and tender.
