'The Homer' Donut

How to Make - "Comfort Foods"

Supplies

  • 500g royal icing sugar
  • 5 tbsp milk
  • 1 tsp vanilla bean paste/vanilla extract
  • Sprinkles:
  • 250g royal icing sugar
  • 2 tbsp water
  • Gel food colour in pink, yellow, blue, green
  • Uses approx 2/3 dough recipe above

Steps

  1. Use a ring cutter to cut out ring shapes in the dough and place them onto the greased trays. Leave to rise for around 20-30 minutes until the dough springs back when you touch it.
  2. Cook the dough rings in the pre-heated fryer for around 60 seconds on each side until golden brown.
  3. Remove with tongs or a spider and place onto a baking tray lined with a paper towel to soak up any excess oil.
  4. Make the vanilla icing by mixing together the sugar, vanilla bean paste and half of the milk into a bowl. Then gradually add the rest of the milk while mixing until you end up with a smooth mixture.
  5. Dip the ring donuts top down into the bowl of icing and then gently pull them out to give them an even covering.
  6. Place onto a flat surface and scatter over the sprinkles.
  7. Hack: Make your own sprinkles
  8. Mix the icing sugar with the water until combined – it should have a gluey and thick consistency. You might even be like “whaattt? This needs more water” but just keep stirring!
  9. Divide the icing into four bowls and using a cocktail stick, add a little of each food colour in each one, mixing each
  10. bowl well.
  11. Place the contents of each bowl into a separate icing bag and snip at the end to make a very small hole.
  12. Place down a sheet of greaseproof paper onto a level surface and pipe lines in each colour of icing directly onto the sheet. The icing will be very thick so you need a steady hand! Don’t worry if there’s gaps in between the lines, you won’t notice this later.
  13. Leave to dry overnight before cutting the sprinkles up into tiny strips using a sharp knife.
  14. Roll the paper up into a cylinder and give it a tap against the surface to remove any sprinkles that have got stuck.
  15. Decorate your favourite donuts using your new fancy schmancy sprinkles!
