Supplies

Five Spice Fortune Cookie

  • 2 egg whites
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 6 tablespoons melted butter
  • A few drops of red food coloring
  • 1/2 cup all-purpose flour, sifted
  • 1/4 teaspoon Chinese five spice
  • Pinch of salt

Chocolate Dip

  • 6 ounces semisweet chocolate, melted
  • 1/4 teaspoon Chinese five spice

Steps

Five Spice Fortune Cookie

  1. In a mixing bowl, whisk egg whites and sugar together until the sugar has mostly dissolved. Then add vanilla and almond extracts and whisk again.
  2. Add sifted flour, five spice, salt and mix until combined. Then mix in melted butter and red food coloring.
  3. Preheat oven to 325F. Working with 2 at a time, spoon about 1-2 teaspoons of batter onto a parchment-lined baking sheet, and use the back of a spoon or offset spatula to spread the batter into a 4-inch diameter circle. Bake for 8-10 minutes, or until the edges turn slightly darker.
  4. Working quickly, use a spatula to remove the cookie from the sheet. If placing a paper fortune inside, place the message in the center. Then use your fingers to quickly fold the cookie, bringing the edges together at the middle. Immediately hang it on the edge of a cup to complete the shape. Place it in a muffin tin to hold its shape, while quickly working on the next cookie.
  5. In a bowl, mix five spice into melted chocolate, dip outside edges of each cookie in chocolate, and let cool completely.
