- 1 teaspoon vegetable oil
- 1 large egg
- 1/2 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1-2 tablespoons raspberry jam
- 2 tablespoons white chocolate chips
- Garnish: Powdered sugar and Raspberries
- Whisk all ingredients except jam and chips.
- Fold chips into batter and swirl in the jam. microwave 1 1/2 minutes.
- Top with fresh raspberries.
