- 3 tablespoons Sugar
- 1 Lemon, Juiced
- 1 tablespoon Potato Starch
- 2 Cups Bilberries or Blueberries
- Bring 1 1/2 cups of water to a boil and add sugar.
- Once sugar has dissolved, add berries, bring to a boil and cook for 5 minutes.
- Turn off the heat and mix with an immersion blender until blended thoroughly.
- Add the lemon juice and potato starch, whisking until blended with the berries.
- Return to heat until the edges simmer.
- Can be served cold or hot.
