• 3 tablespoons Sugar
  • 1 Lemon, Juiced
  • 1 tablespoon Potato Starch
  • 2 Cups Bilberries or Blueberries


  1. Bring 1 1/2 cups of water to a boil and add sugar.
  2. Once sugar has dissolved, add berries, bring to a boil and cook for 5 minutes.
  3. Turn off the heat and mix with an immersion blender until blended thoroughly.
  4. Add the lemon juice and potato starch, whisking until blended with the berries.
  5. Return to heat until the edges simmer.
  6. Can be served cold or hot.
