Lemon Barley Water

Many cultures make some form of this drink - and for good reason, it's chock full of nutrients and pretty darn refreshing.

Supplies

  • 1 1/2 cups pearled barley
  • 6 cups water
  • 1 large lemon — peeled and juiced
  • 2 tablespoons sugar
  • 1 sprig mint (optional)
  • Garnish with additional lemon slices

Steps

  1. Bring 6 cups of water to a boil.
  2. Rinse the barley under cold water, until water runs clear.
  3. Once water is boiling, add the rinsed barley and lemon peels, cover with a tight-fitting lid.
  4. Reduce heat to gentle simmer and cook for 10 more minutes.
  5. Remove from heat.
  6. Add sugar and lemon juice, steep and allow to cool for approx. 30 minutes.
  7. Strain, discarding the barley and lemon peels into big bowl
  8. Reserve the water, adjust lemon and sugar to taste, and refrigerate.
  9. Garnish with mint
  10. Serve and enjoy on ice.
