Spanish Horchata

This drink was born way before the Horchata you probably know and love. Honestly, sometimes the parents are cooler than the kids.

Supplies

  • 2 cups of chufa nuts (aka tigernuts or yellow nutsedge)
  • A pinch of sea salt
  • 1 tablespoon cinnamon
  • 1 tablespoon sugar
  • 6 cups of water

Steps

  1. First, add about 2 cups of water to your chufa nuts. Toss in a cinnamon stick for good measure and let it soak overnight.
  2. The next day, drain and add them to a high powered blender or food processor.
  3. Add 6 cups of water as well and blend.
  4. Strain your mixture with a nut milk bag or cheesecloth.
  5. Finish by adding some salt, sugar and cinnamon. Whisk everything together.
  6. Serve cold.
