- Chufa nuts 2 cups
- Sea salt 1 pinch
- Cinnamon 1 tablespoon
- Sugar 1tablespoon
- Water 6 cups
- First, add about 2 cups of water to your chufa nuts. Toss in a cinnamon stick for good measure and let it soak overnight.
- The next day, drain and add them to a high powered blender or food processor.
- Add 6 cups of water as well and blend.
- Strain your mixture.
- Finish by adding some salt, sugar and cinnamon. Whisk everything together.
- Serve cold.
