- 1 head of green cabbage
- 1 fresh coconut
- 2 ears corn
- 3 tomatoes
- Juice of 1 lime
- 1/4 cup chopped cilantro
- Salt
Steps
- Separate cabbage leaves. These are the taco 'shells.'
- Remove coconut meat from coconut and cut into 1' pieces and add to shells
- Dice tomatoes, shave corn and chop cilantro, add to a bowl and mix with lime juice and salt. Top tacos with the mixture.
- Serve with mango salsa.
