- 300g chocolate cake mix
- 3 large eggs
- 300g courgette, finely grated
- 140g dark chocolate chips
- Preheat oven to 180 C. Line a loaf tin with baking parchment.
- In a large mixing bowl whisk together all of your ingredients apart from the chocolate chips.
- Once you have a smooth batter, fold your chocolate chips through the cake mix and then spoon into your prepared loaf tin.
- Bake in the oven for 40 minutes, then cool on a wire rack.
