• 300g chocolate cake mix
  • 3 large eggs
  • 300g courgette, finely grated
  • 140g dark chocolate chips


  1. Preheat oven to 180 C. Line a loaf tin with baking parchment.
  2. In a large mixing bowl whisk together all of your ingredients apart from the chocolate chips.
  3. Once you have a smooth batter, fold your chocolate chips through the cake mix and then spoon into your prepared loaf tin.
  4. Bake in the oven for 40 minutes, then cool on a wire rack.
