Life is easier when you can bake food in a tray. Here are 5 of our favourite simple and easy tray bake recipes. From a Ham and Cheese Toastie Bake to a bake perfect for breakfast, each tray has got you covered whatever the occasion.

Supplies

  • 2 sheets puff pastry
  • 2 tsp Dijon mustard
  • 10 slices ham
  • 250g grated mozzarella & cheddar mix
  • 100g grated monterey jack
  • 1 egg, beaten

Steps

  1. Preheat the oven to 200c.
  2. Line a baking sheet with greaseproof paper and lay one sheet of pastry on top. Spread with the mustard then add the ham in an even layer, leaving a 1cm border all the way round the edge. Scatter over the cheeses, then top with the second sheet of pastry. Seal the border all the way round using a fork then egg wash the entire parcel. Bake for 25 minutes and leave to cool for 5 minutes before cutting into 8.

Supplies

  • 4 chicken breasts
  • 100g mozzarella, sliced
  • 100g sun dried tomatoes
  • 500g gnocchi
  • 150g cherry tomatoes
  • ½ red onion, thinly sliced
  • 100ml pesto
  • Basil, for decoration

Steps

  1. Preheat the oven to 190c.
  2. Cut into the chicken breasts to make slices, being careful not to cut all the way through. You want 5 incisions in each breast. Stuff each incision with a slice of mozzarella and a sun dried tomato, then season each breast and drizzle with olive oil. Transfer to a baking tray.
  3. In a bowl add the gnocchi and pesto and mix together well. Tip onto the baking sheet, in and around the chicken. Scatter over the tomatoes and onion then bake everything for 25 minutes or until the chicken is cooked through and the gnocchi crispy and golden.
  4. Serve right away with some basil leaves scattered over the top.

Supplies

  • For the marinade:
  • 150ml black bean sauce
  • 6 garlic cloves, minced
  • Thumb of ginger, finely grated
  • 400g stir frying steak, sliced into small pieces
  • 400g broccoli, cut into florets
  • 4 spring onions, sliced
  • 1 red chilli, sliced
  • 1 tbsp sesame seeds
  • Optional rice, to serve

Steps

  1. Preheat the oven to 220c.
  2. In a large bowl add the marinade ingredients and mix together well. Add the steak and leave to marinade for 15 minutes. Using a slotted spoon remove and put on the baking sheet, with space between each piece. Toss the broccoli in the marinade and add to the tray, between the steak pieces. Reserve the marinade and bake the tray for 10 minutes, or until the beef is cooked through and the broccoli is just tender.
  3. Scatter with the spring onions, chilli and sesame seeds before serving.

Supplies

  • 500g tortilla chips
  • 500g tomatillo salsa
  • 4 eggs
  • ½ small red onion, diced
  • 50g feta, crumbled
  • 1 avocado, diced
  • Few sprigs coriander

Steps

  1. Preheat the oven to 190c.
  2. Tip the tortilla chips into a roasting tray, then top with green salsa. Toss to coat then make 4 indentations. Crack the eggs into these holes and bake for 12 minutes or until cooked to your liking. Top with the red onion, feta, avocado and coriander sprigs before serving.
