- 500g tortilla chips
- 500g tomatillo salsa
- 4 eggs
- ½ small red onion, diced
- 50g feta, crumbled
- 1 avocado, diced
- Few sprigs coriander
Steps
- Preheat the oven to 190c.
- Tip the tortilla chips into a roasting tray, then top with green salsa. Toss to coat then make 4 indentations. Crack the eggs into these holes and bake for 12 minutes or until cooked to your liking. Top with the red onion, feta, avocado and coriander sprigs before serving.
