Chicken Skewers with Satay Sauce and Noodle Salad
It's peanut butter satay time!
Supplies
- 3 large chicken breasts
- Bunch of coriander
- 1 clove garlic
- 4 tablespoons good quality crunchy peanut butter
- 2 tablespoons soy sauce
- Small knob of ginger
- Zest and juice of 2 limes
- Runny honey
- 250 grams glass noodles
- Handful of unsalted peanuts
- 2 shallots
- 1 red chilli
- 1 lime
- 1 teaspoon honey
- 1 teaspoon fish sauce
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
Steps
- For the satay sauce, blend together a handful of coriander, garlic, peanut butter, soy sauce, ginger, limes and a splash of water in a food processor.
- Marinade the chicken in a few tablespoon. of the mix and place on skewers. Place under the grill for 10-12 minutes until cooked through.
- For the noodle salad, cook the noodles as per the packet instructions, drain and rinse in cold water. Place in a large bowl and add in the chopped shallots, peanuts, chilli, lime, honey, fish sauce, soy sauce and sesame oil and combine well.
- Remove the chicken from the grill and serve alongside the salad.
