For the satay sauce, blend together a handful of coriander, garlic, peanut butter, soy sauce, ginger, limes and a splash of water in a food processor.
Marinade the chicken in a few tablespoon. of the mix and place on skewers. Place under the grill for 10-12 minutes until cooked through.
For the noodle salad, cook the noodles as per the packet instructions, drain and rinse in cold water. Place in a large bowl and add in the chopped shallots, peanuts, chilli, lime, honey, fish sauce, soy sauce and sesame oil and combine well.
Remove the chicken from the grill and serve alongside the salad.
