Crispy Peking Duck in Pancakes

Supplies

  • 2 duck legs
  • Salt
  • Five-spice
  • Fresh ginger
  • 6 de-stoned plums
  • 3 tablespoons sugar
  • 1 pinch five-spice
  • 2 tablespoons soy sauce
  • Pinch chilli powder
  • Grated orange zest
  • 1/2 cucumber
  • 1 bunch spring onions
  • 2 packs pre-made pancakes

Steps

  1. Preheat the oven to 170°C/325°F.Rub the duck legs with lots of salt, inside and out and then all over with five-spice. Place the duck legs in a roasting tray and put it in the oven.
  2. To make the plum sauce. place de-stoned plums into a pan with sugar, a five-spice a couple of tablespoons of soy sauce and chilli powder. Bring to the boil, then simmer until its thick.
  3. Set to one side to cool before serving it, and taste to check the seasoning. Finely slice the spring onions and slice half a cucumber into sticks. Once the duck has cooled a little bit, use two forks to shred all the meat off the carcass.
  4. Steam the pre made pancakes until hot.Take a pancake, place some duck, a bit of spring onion, a little cucumber and a dollop of plum sauce on to it, then roll it up.
