Crispy Peking Duck in Pancakes

Supplies
- 2 duck legs
- Salt
- Five-spice
- Fresh ginger
- 6 de-stoned plums
- 3 tablespoons sugar
- 1 pinch five-spice
- 2 tablespoons soy sauce
- Pinch chilli powder
- Grated orange zest
- 1/2 cucumber
- 1 bunch spring onions
- 2 packs pre-made pancakes
Steps
- Preheat the oven to 170°C/325°F.Rub the duck legs with lots of salt, inside and out and then all over with five-spice. Place the duck legs in a roasting tray and put it in the oven.
- To make the plum sauce. place de-stoned plums into a pan with sugar, a five-spice a couple of tablespoons of soy sauce and chilli powder. Bring to the boil, then simmer until its thick.
- Set to one side to cool before serving it, and taste to check the seasoning. Finely slice the spring onions and slice half a cucumber into sticks. Once the duck has cooled a little bit, use two forks to shred all the meat off the carcass.
- Steam the pre made pancakes until hot.Take a pancake, place some duck, a bit of spring onion, a little cucumber and a dollop of plum sauce on to it, then roll it up.
