This is one of those lightbulb moments
Handful of wild mushrooms of choice, sliced
40 grams mozzarella
Salt & pepper
Handful cheddar cheese
Handful chopped chives
A pinch of paprika
Slice croissants in half, place mushrooms and cheese on top and place under the grill to soften mushrooms, melt cheese and brown for about 5 minutes. Season with salt and pepper, a dusting of paprika and serve immediately.
