• 4 floury tortillas
  • 150 grams of grated smoked cheese
  • 150 of grated mature cheddar
  • 125 grams ball of mozzarella, sliced
  • 1 195 grams tinned sweetcorn
  • 200 grams tinned black beans, drained
  • 1 ripe avocado, thinly sliced
  • 2 plum tomato, deseeded and finely sliced
  • 1 red chilli, optional
  • 1 Spring onions, finely sliced
  • Sour cream, optional
  • Coriander
  • Lime


  1. On a medium heat place a medium sauce and lightly grease. Place a tortillas into the pan and start laying up. Start with a handful of both the grated cheeses to cover, followed by slices of the mozzarella. Then layer up the other ingredients. Scatter over half the black beans, half the sweetcorn, the avocado, the tomato, few slices of spring onion and chilli if you are using, repeat with the same cheeses and place another tortilla on the top. Flip, and brown the tortilla on the quesadilla on the other side. Repeat with the remaining ingredients for two cheesy quesadillas. Serve with a spoonful of sour cream, coriander leaves and a lime wedge.
