On a medium heat place a medium sauce and lightly grease. Place a tortillas into the pan and start laying up. Start with a handful of both the grated cheeses to cover, followed by slices of the mozzarella. Then layer up the other ingredients. Scatter over half the black beans, half the sweetcorn, the avocado, the tomato, few slices of spring onion and chilli if you are using, repeat with the same cheeses and place another tortilla on the top. Flip, and brown the tortilla on the quesadilla on the other side. Repeat with the remaining ingredients for two cheesy quesadillas. Serve with a spoonful of sour cream, coriander leaves and a lime wedge.
