Baileys Cheesecake for One

Cheesecake for one means you finally won’t have to share your birthday cake with anyone. We’ll take any excuse for extra dessert, with a little help from Baileys Chocolat Luxe.

Supplies

  • 2 chocolate digestives, finely crushed
  • 1tbs unsalted butter, melted
  • ¼ tsp orange zest (optional)
  • 35g cream cheese
  • 3tbs double cream
  • 1tb Baileys Chocolat Luxe
  • 2tsp icing sugar, sifted
  • Whipped cream
  • Dark chocolate, shaved
  • Orange zest (optional)
  • Raspberries (optional)

Steps

  1. To make the base, combine the crushed biscuits, melted butter and zest in a small bowl and mix to thoroughly combine. Press the biscuit mix into the bottom of an individual loose-bottom tart case and set aside while you prepare the filling.
  2. Combine cream cheese, double cream, Baileys and icing sugar in a small bowl and whisk to smooth firm peaks. Top the biscuit base with the filling, smooth the top and chill for at least 1 hour to set.
  3. To serve, remove the cheesecake from the tart case and top with whipped cream, some grated chocolate and a little orange zest.
