• 1/2 shallot diced
  • 4 teaspoons English mustard
  • 4 teaspoons soy sauce
  • 6 tablespoons Hoisin sauce
  • 1 tablespoon chilli sauce
  • 1 teaspoon honey
  • 1 tablespoon mustard seeds
  • 800 grams pork spare ribs
  • 1 spring onion


  1. Combine all ingredients together to make a marinade then rub onto the spare ribs. Cover and refrigerate for at least 30 minutes.
  2. Heat oven to 200C and roast for 45 minutes. This can also be grilled on a BBQ, in which case times will vary. Check juices run clear and meat is cooked all the way through.
  3. This marinade can also be used for chicken wings, drumsticks, thighs and pork chops.
