Ingredients

  • Cookie:

  • 140 grams Unsalted Butter

  • 160 grams Light Brown Sugar

  • 120 grams Caster Sugar

  • 1 teaspoon vanilla

  • 1 Egg & 1 Yolk

  • 300 grams Plain Flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

  • 200 grams Chocolate Chips

  • Brownie:

  • 140 grams Butter Soft

  • 140 grams Light Brown Sugar

  • 140 grams Caster Sugar

  • 1 Egg & 1 Yolk

  • 1 teaspoon Vanilla

  • 200 grams Plain Flour

  • 50 grams Cocoa Powder

  • 1 teaspoon baking soda

  • Pinch Salt

Instructions

  1. Start with the cookie mixture. Beat the butter and sugars together until they are light and fluffy, about 2 minutes.

  2. Add in the egg, egg yolks and vanilla paste and beat for a further minute.

  3. Sift the dry ingredients together and then fold them into the wet mixture until all of the flour is absorbed. Add in the chocolate chips and set to one side.

  4. For the brownie cookie, follow the exact same process as the cookie, adding the cocoa powder along with the flour.

  5. Taking a teaspoon of each dough, roll them into balls, and then firmly press the two balls together to form one brookie ball.

  6. Add them to a baking tray with enough space for them to spread.

  7. Bake at 175c for 8-9m and then allow them to cool on the tray for 2m once cooked before serving.
