Boxed brownie mix: The ultimate overachiever. Three recipes in one!

Brownie Mix 3 Ways

Ingredients

  • Brownie Waffles:

  • 1 packet brownie mix

  • 1 large egg

  • 50g chopped white chocolate

  • Cooking spray

  • Whipped cream, to serve

  • Sprinkles, to serve

  • Brownie Batter Frosting:

  • 225g softened butter

  • 200g packet brownie mix

  • 50g dark chocolate, melted

  • Pinch salt

  • 375g icing sugar

  • 2 tbsp hot water, if needed

  • Brownie Pizza:

  • 1 packet brownie mix

  • Whipped cream

  • Berries - strawberries, blueberries

  • M&M's

  • Reeses pieces

  • Freeze dried raspberries

  • Sprinkles

Instructions

  1. Brownie Waffles: preheat the waffle iron and grease it lightly with cooking spray.

  2. In a bowl, prepare the brownie batter per the box instructions then stir in 1 additional egg. Scoop some of the batter into the waffle iron and close the lid. Cook the waffle for about 5 minutes then open the lid and remove the waffle.

  3. Top the brownie waffle with whipped cream and sprinkles and serve immediately.

  4. Brownie Batter Frosting: in a mixing bowl, beat the butter until light and fluffy. Pour in the melted chocolate squares and mix thoroughly then add the dry brownie mix, salt and beat again. Slowly add in the icing sugar. It will be thick!

  5. Add the hot water (one tablespoon at a time) until the desired consistency is achieved. Leave overnight and whisk again in the morning before using to top your favourite chocolate cake or maybe even a brownie!

  6. Brownie Pizza: preheat oven to 180 C degrees. Line a 23cm springform tin with baking paper.

  7. In your mixer add all the brownie ingredients and mix just until everything is well blended.

  8. Spread half of the brownie mix over the baking paper and spread out. Bake for 20 minutes.

  9. Let it cool completely. Repeat with the other half of the mixture.

  10. Whip the cream with the caster sugar until it holds soft peaks.

  11. Spread over the brownies and chop each brownie into 8.

  12. Arrange berries, chocolate and sprinkles over the cream on each slice.
