- 100g digestives
- 400g cream cheese
- 100ml Baileys Original Irish Cream
- 100g double cream, whipped to soft peaks
- 50g dark chocolate, melted
Steps
- Crush the biscuits and press into the bottom of a small lined cake tin.
- Whip the cream cheese and Bailey's together.
- Separately, whip the double cream to soft peaks.
- Fold the whipped cream into the cream cheese mixture.
- Tip the mixture into the tin and smooth over.
- Pop in the fridge until set, and then pipe over the melted dark chocolate.
