• 100g digestives
  • 400g cream cheese
  • 100ml Baileys Original Irish Cream
  • 100g double cream, whipped to soft peaks
  • 50g dark chocolate, melted


  1. Crush the biscuits and press into the bottom of a small lined cake tin.
  2. Whip the cream cheese and Bailey's together.
  3. Separately, whip the double cream to soft peaks.
  4. Fold the whipped cream into the cream cheese mixture.
  5. Tip the mixture into the tin and smooth over.
  6. Pop in the fridge until set, and then pipe over the melted dark chocolate.
