• 2 tablespoons vegetable oil
  • 350 grams chicken breast fillets, finely chopped
  • 2 shallots, peeled and finely sliced in half moons
  • Salt and white pepper
  • 1 inch ginger, grated
  • 6 cloves garlic, finely chopped
  • 1 bunch spring onions, finely sliced
  • 2 fresh lime, juiced
  • 1 tablespoon fish sauce
  • 3 small birdseye chillies, sliced
  • Mint and coriander to serve


  1. Heat your oil in a large frying pan or wok and add in your chicken. Stir around and then add in your shallots, ginger, garlic, salt and white pepper and stir until the chicken is cooked. Then add in your spring onions, lime juice, fish sauce, chillies, and stir until the juices evaporate. Serve with fresh mint and coriander.
