Cake

  • 100g Tesco milk chocolate
  • 375g butter, softened
  • 375g light brown sugar
  • ½ tsp salt
  • 100g cocoa powder
  • 375g plain flour
  • 3 tsp baking powder
  • 5 large eggs
  • 100ml milk

Buttercream

  • 250g butter, softened
  • 400g icing sugar
  • 2 tbsp milk
  • 25g cocoa powder
  • 100g Tesco milk chocolate, melted and cooled

Decoration

  • Chocolate bunny
  • Orange fondant carrots
  • Tesco micro Easter eggs
  • Green food colouring
  • 2 Tesco cookies and cream sandwich biscuits
  • Specialist equipment
  • 3x 20cm sandwich pans
  • Wilton 233 piping nozzle

Steps

Cake

  1. Preheat the oven to 160c.
  2. Grease and line the bases of 3x 20cm sandwich tins with greaseproof paper.
  3. Melt the chocolate then set aside to cool slightly.
  4. Cream together the butter and sugar with the salt until light and fluffy then add the eggs one at a time and beat until well combined.
  5. Sift together the cocoa, flour and baking powder then fold into the dry ingredients followed by the melted chocolate and milk. Divide between the tins and bake for 30 minutes until firm in the centre.
  6. Remove from the oven and allow to cool completely.

Buttercream

  1. Beat the butter and icing sugar on a high speed for a couple of minutes until really light and fluffy.
  2. Scoop out a couple of spoonfuls and put into a small bowl. To the large bowl sift in the cocoa powder, then add the melted chocolate and a couple of tablespoons of milk. Beat well until everything is combined.
  3. Put one of the cakes on a serving plate and spread a quarter of the icing on top. Place the second on top, then spread with another quarter of icing. Place the final sponge on top and cover the top and sides with the remaining icing.
  4. Remove the biscuit filling then crush to a fine crumb and sprinkle over the cake.

Decoration

  1. Add a few drops of green food colouring to the buttercream that was set aside earlier, then put into a piping bag with a grass effect nozzle.
  2. Pipe patches of grass over the surface of the cake and finish by placing the chocolate bunny in the centre of the cake and surrounding with a few fondant carrots and lots of micro Easter eggs.
