Chocolate Chip Cookie Brownies

Can't decide between chocolate brownies and chocolate chip cookies? Well, now you can have both PLUS a layer of oozy caramel, because we're nice like that.

Supplies

BROWNIE LAYER

  • 225 grams caster sugar
  • 125 grams butter, melted
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 125 grams plain flour
  • 50 grams cocoa powder

CARAMEL LAYER & COOKIE DOUGH

  • 150 grams caramel sauce
  • 100 grams butter, softened
  • 100 grams sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 150 grams plain flour
  • 1/3 teaspoon bicarbonate of soda
  • 100 grams milk chocolate chips

Steps

BROWNIE LAYER

  1. Pre-heat the oven to 180c.
  2. Grease and line the base and sides of the cake tin with greaseproof paper.
  3. Mix together the butter and sugar, then beat in the vanilla and eggs. Sieve in the flour and cocoa powder then mix to combine. Pour into the tin and level the top. Set aside in the freezer to firm up for 15 minutes.

CARAMEL LAYER & COOKIE DOUGH

  1. Remove the brownie from the freezer then spread over the caramel sauce in an even layer. Return to the freezer for another 10 minutes.
  2. In a large bowl cream together the butter and sugar. Beat in the egg and vanilla and then stir in the flour, bicarbonate of soda and the chocolate chips.
  3. Remove the brownie tin from the freezer and spread over the cookie dough.
  4. Bake for 35-40 minutes then remove from the oven and allow to cool completely in the tin.
  5. Cut into 9 squares and serve.
