Coronation Chicken Burger

Well, would you look at that, it is almost Coronation Day! Are you heading down to Buckingham Palace? Personally, we’ll be staying home and making our Coronation Chicken Burger with Birds Eye to celebrate! Our tastebuds are about to feel truly royal.

Supplies

  • 2 Birds Eye Ultimate Chicken Fillet Burgers
  • 2 Cobbler buns, cut in half
  • 50g mayonnaise
  • 30g mango chutney
  • 10g madras curry paste
  • Pinch of cinnamon
  • 1 tbsp greek yoghurt
  • 25g sultanas
  • 3 tbsp mayonnaise
  • ½ tsp English mustard
  • 1 medium carrot, shaved into ribbons
  • ½ cucumber, shaved into ribbons
  • 1 tsp white wine vinegar
  • Salt and pepper
  • Red onion, slices (optional)
  • Lettuce (optional)
  • Chopped coriander (optional)
  • Green salad (mixed leaf, spring onion, avocado)

Steps

  1. Cook the Birds Eye Ultimate Chicken Fillet Burgers for 24 minutes at 190°c.
  2. Preheat a griddle pan, and when piping hot grill the buns until griddle marks appear.
  3. Make the coronation sauce: Combine the ingredients in a bowl, and set aside.
  4. Make the English mustard mayonnaise: Combine the ingredients in a bowl, and set aside.
  5. Make the pickled carrots: Combine the carrots and cucumber with the white wine vinegar, and season to taste.
  6. To serve: To build the burger, coat the bottom bun with the english mustard mayonnaise and layer the burger with red onions, lettuce, the pickled veg, the ultimate chicken burger, coronation sauce and chopped coriander and top with the top of the bun
  7. Serve the burger with a fresh green salad. Enjoy.
