Crispy Chilli, Avocado and Lime Chicken Tacos

We’ve said it before, and we’ll say it again, abolish Taco Tuesday and start living your best life! Birds Eye makes make taco’s easy as anything.

Supplies

  • 4 corn tacos
  • 200g Birds Eye Salt & Pepper Goujons
  • 200g shredded lettuce
  • 1 avocado
  • 150ml sour cream
  • 1 1/2 limes - 1/2 for juice & zest
  • Salt and pepper
  • Zest of 1/2 lime
  • Handful of fresh coriander
  • Chopped 1 red onion, finely diced
  • 1 chilli, sliced
  • 1⁄2 tsp garlic granules

Steps

  1. Place the Birds Eye salt and pepper goujons in the oven and cook as recommended.
  2. Place the sour cream, avocado, garlic granules, juice and zest for 1/2 a lime, salt and pepper into a food processor and blitz until smooth then set aside.
  3. Finely dice the red onion and coriander together then also set aside.
  4. Heat a lightly oiled griddle pan and cook each taco for a minute on each side.
  5. Once the goujons are cooked add the cooked tacos to a plate. Top with lettuce and the goujons then add the avocado lime sauce. Finish with the chopped onion, coriander and sliced chillies. Serve with a wedge of fresh lime.
