Here's how to create an epic pastry tower so you can scale it like a mini King Kong
Supplies
Choux
- 250 ml water
- 100 gr butter
- 5 gr sugar
- 2 gr salt
- 150 gr plain flour
- 250 gr eggs
Crème Pâtissière
- 500 ml milk
- Vanilla Pod
- 80 gr yolk
- 120 gr caster sugar
- 40 gr plain flour
- 40 gr corn flour
- Caster Sugar
Steps
Choux
- Heat up water, butter, sugar and salt. Add flour and mix.
- Leave to cool.
- Whisk in eggs.
- Pipe balls and cook at 190C for 20-25 minutes.
Crème Pâtissière
- Fill balls.
- Make caramel - bowl of ice ready.
- Build the croquembouche.
- Make spun sugar decorations.
