Supplies

Choux

  • 250 ml water
  • 100 gr butter
  • 5 gr sugar
  • 2 gr salt
  • 150 gr plain flour
  • 250 gr eggs

Crème Pâtissière

  • 500 ml milk
  • Vanilla Pod
  • 80 gr yolk
  • 120 gr caster sugar
  • 40 gr plain flour
  • 40 gr corn flour
  • Caster Sugar

Steps

Choux

  1. Heat up water, butter, sugar and salt. Add flour and mix.
  2. Leave to cool.
  3. Whisk in eggs.
  4. Pipe balls and cook at 190C for 20-25 minutes.

Crème Pâtissière

  1. Fill balls.
  2. Make caramel - bowl of ice ready.
  3. Build the croquembouche.
  4. Make spun sugar decorations.
