Ingredients
- Choux:
- 250 milliliters water
- 100 grams butter
- 5 grams sugar
- 2 grams salt
- 150 grams plain flour
- 250 grams eggs
- Crème Pâtissière:
- 500 milliliters milk
- Vanilla Pod
- 80 grams yolk
- 120 grams caster sugar
- 40 grams plain flour
- 40 grams corn flour
- Caster Sugar
Steps
- - Heat up water, butter, sugar and salt
- - Add flour and mix
- - Leave to cool
- - Whisk in eggs
- - Pipe balls and cook at 190C for 20-25 minutes
- - Make crème pâtissière
- - Fill balls
- - Make caramel - bowl of ice ready
- - Build the croquembouche
- - Make spun sugar decorations
