Ingredients

  • Choux:
  • 250 milliliters water
  • 100 grams butter
  • 5 grams sugar
  • 2 grams salt
  • 150 grams plain flour
  • 250 grams eggs
  • Crème Pâtissière:
  • 500 milliliters milk
  • Vanilla Pod
  • 80 grams yolk
  • 120 grams caster sugar
  • 40 grams plain flour
  • 40 grams corn flour
  • Caster Sugar

Steps

  1. - Heat up water, butter, sugar and salt
  2. - Add flour and mix
  3. - Leave to cool
  4. - Whisk in eggs
  5. - Pipe balls and cook at 190C for 20-25 minutes
  6. - Make crème pâtissière
  7. - Fill balls
  8. - Make caramel - bowl of ice ready
  9. - Build the croquembouche
  10. - Make spun sugar decorations
