Dessert Hummus

Everyone loves hummus and we've found a great way to eat it for dessert! Here are 3 awesome flavours to try including chocolate brownie and strawberry cheesecake.

Supplies

  • Sweet Hummus Recipe:
  • 1kg chickpeas
  • 3 tbsp coconut oil
  • 3 tbsp oat milk
  • 3 tbsp maple syrup
  • Brownie batter:
  • 1 tsp vanilla paste
  • 2 tbsp cocoa powder
  • 1 tbsp maple syrup
  • Shaved white chocolate, to serve
  • Shaved dark chocolate, to serve
  • Chocolate peanut butter:
  • 3 tbsp smooth peanut butter
  • 1/4 tsp cinnamon
  • 1 tbsp icing sugar
  • 3 tbsp salted peanuts, 1 tbsps for the hummus, 2 tbsps,
  • chopped, to garnish
  • Shaved dark chocolate, to serve
  • Strawberry cheesecake:
  • 1 tbsp cream cheese
  • 1 tbsp icing sugar
  • 2 strawberries, 1 for the hummus, 1 chopped, to garnish
  • Zest of 1/2 a lemon
  • 1 digestive biscuit, crumbled, to garnish

Steps

  1. To make the basic sweet hummus, blitz the chickpeas in a food processor until broken down and nearly smooth. Add the rest of the ingredients and blitz again until completely smooth - this may take up to 5 minutes.
  2. Split the mixture into 3.
  3. Brownie Batter: add the basic hummus portion back into the food processor along with the vanilla paste, cocoa powder and maple syrup. Blitz for a further two minutes.
  4. Serve sprinkled with the shaved white and dark chocolate.
  5. Peanut Butter Hummus: add the basic hummus portion to a blender and add the peanut butter, icing sugar and cinnamon. Blitz for a further two minutes. Add the 1 tbsp of salted peanuts and pulse a few times to incorporate, but still leave some texture.
  6. Serve sprinkled with the chopped salted peanuts and shaved chocolate.
  7. Strawberry Cheesecake Hummus: add the basic hummus portion to a blender and add the cream cheese, icing sugar, 1 strawberry and lemon zest and blitz for 2 minutes.
  8. Serve garnished with the chopped strawberry and crumbled biscuits.
