Baileys Caramel

  • 225g Sugar
  • 3 Tbsp Water
  • 150ml Double Cream
  • 25ml Baileys Original Irish Cream
  • 40g Unsalted Butter

Baileys Cream Cheese Filling

  • 375g Cream Cheese, Room Temperature
  • 150g Mascarpone, Room Temperature
  • 50g Sour Cream, Room Temperature
  • 65g Caster Sugar
  • ⅓ Tsp Vanilla Bean Paste
  • 50ml Baileys Original Irish Cream

Assembly

  • 1 Large Milk Chocolate Easter Egg
  • Selection of Mini Easter Eggs & Biscuit Crumb

Steps

Baileys Caramel

  1. Into a medium saucepan, add the water & sugar. Place it over a medium heat, stirring it occasionally, until it reaches a deep golden colour. Pour in the double cream & Baileys Original Irish Cream and whisk till smooth. Finally, add in the butter and whisk until melted. Pour the mixture into a jar and allow it to cool for 1 hour.

Baileys Cream Cheese Filling

  1. Into a large bowl (or the bowl of a stand mixer if you are using one), add the cream cheese, mascarpone, sour cream, vanilla, sugar & Baileys Original Irish Cream. Whisk the mixture together until it thickens to a medium/stiff peak. Add the filling into a piping bag.

Assembly

  1. Dip a sharp knife in hot water, and carefully cut the Easter egg in half. Place the easter eggs onto a tray, and pipe the Baileys cheesecake filling to the top of each egg, using a spoon to smooth it out.
  2. Add the cooled caramel into a piping bag (or a sandwich bag) and snip a small hole off of the end. Drizzle the caramel over the cheesecake filling in a zigzag pattern.
  3. Finally, take chocolates of your choice and decorate the top of the Easter egg with them. Finish with a crumb of your favourite biscuits!
