Place the chicken into the bundt pan. Scatter the vegetables around the inside of the tin. Sprinkle half of the seasoning over the vegetables, and rub the rest into the chicken with a little oil.
Bake in the oven for 1 hour 15 or until the chicken and vegetables are cooked through.
Slice from the chicken onto the tortilla wraps and load up with vegetables, guacamole, sour cream and cheddar. Finally sprinkle over some coriander and a squeeze of lime juice.
