Supplies
- For the sauce:
- 4 tbsps olive oil
- 1 large onion, finely diced
- 2 garlic cloves, minced
- 750ml lager
- 400ml passata
- 25ml Port
- 125ml white wine
- 25ml brandy
- 1 tbsp Worcestershire sauce
- 1 tbsp piri-piri sauce
- 1 dried piri piri chilli
- 2 bay leaves
- 1 tbsp salt
- 1 tbsp fresh ground pepper
- 1 tbsp cornflour
- To assemble:
- 4 linguica sausages
- 1 sirloin steak, bashed to about 1 cm thick
- Olive oil
- Salt and freshly ground black pepper
- 12 slices salami/deli ham
- 4 slices thick sliced white bread
- 14 slices provolone cheese
- 2 fried eggs
Steps
- Begin by making the sauce: place the olive oil into a large saucepan and set over medium heat. Add the onion and cook for 5 minutes until soft and translucent, then add the garlic and cook for a further 2 minutes. Add the remaining ingredients, apart from the cornflour, and bring to the boil then leave to simmer for 30 - 40 minutes until slightly reduced. Remove a few tablespoons of the sauce into a small bowl and mix with the cornflour until no lumps remain - this is called ‘slaking’ - and add the mixture back into the pan. Bring back to the boil, stirring constantly, until the sauce thickens slightly, then set aside.
- To assemble the sandwich: Preheat your oven to 220 C / 200 C and place the sausages into a baking tray. Cook for 30 minutes, until browned and cooked through; alternatively, you can grill or pan-fry the sausages. Whilst the sausages are cooking, heat a griddle pan over high heat. Rub the flattened steak with a little olive oil and season well with salt and pepper then place on the preheated griddle and cook for 2 - 3 minutes on each side, or until done to your liking.
- When the sausages and steak are cooked, begin to assemble your sandwich; cut the sausages open in half lengthways, and cut the steak in half widthways, then build your sandwiches in the following order: 1 slice of bread > 3 slices of salami/ham > 1 slice of cheese > 1 piece of steak > 3 slices of salami/ham > 1 slice of cheese > 4 sausage halves > 1 slice of bread > 5 slices of cheese.
- Toast the sandwich in the oven at 220ºC / 425ºF / Gas mark 7 for about 10 minutes.
- Whilst the sandwich is in the oven, warm your sauce up and fry your egg in olive oil.
- Finally, remove the sandwiches from the oven and place on your serving plates. Place a fried egg on top of each sandwich and pour some hot sauce on top of the sandwich, then tuck in with a cold beer!
