For the Peach Layer

  • 100 grams crushed ice
  • 200 grams frozen peaches and nectarines
  • 50 ml Malibu
  • 100 ml orange juice

For the Red Wine Berries Layer

  • 150 grams crushed ice
  • 225 grams frozen mixed fruits (strawberries, cherries, blueberries, blackberries and raspberries)
  • 50ml Crème de Cassis
  • 120ml Campo Viejo Winemakers’ Blend

For garnish

  • Strawberries
  • Cherries
  • Mint leaves
  • Edible flowers

Steps

For the Peach Layer

  1. Simply add the crushed ice, frozen peaches and nectarines, Malibu, and orange juice into a high speed blender, and blitz in 5 second blasts until combined into a smooth slushy consistency. This will also work really well with a hand blender. Remove the glasses from the freezer and carefully spoon into the glass

For the Red Wine Berries Layer

  1. Next add the crushed ice, frozen black fruits, crème de cassis, and Campo Viejo Winemakers’ Blend into a food processor or high speed blender, and blitz in 5 second blasts until combined into a smooth slushy consistency. Spoon into the glass on top of the peach base to create a layered effect.

For garnish

  1. You will need 4x 250-300ml glass for this cocktail, place into the freezer for 10 mins
  2. Decorate the glass as desired.
  3. We’ve chosen to use frozen fruits on a skewer. The trick is to skewer your fruit first then freeze for 30 minutes. We have chosen a blueberry, raspberry and blackberry. You could also use fresh strawberries, cherries, mint leaves, and edible flowers scattered on top.
