Fried Rice Frittata

Treat your bubble to a fried rice frittata this Easter for an easy, speedy and delicious twist on a family favourite. Always look for the red British Lion mark on egg shells and packs to ensure top quality British ingredients and get cracking today! In partnership with British Lion eggs.

Ingredients

  • 150 grams peas
  • 9 British Lion eggs
  • Thumb sized piece of ginger
  • 250 grams cooked rice
  • 2 tablespoons soy sauce
  • 3 spring onions
  • 1 chilli
  • 2 garlic cloves
  • 1 tablespoon sesame oil

Steps

  1. Preheat the oven to 200°C.
  2. In a suitable pan that can also go in the oven, heat up the oil. Finely chop the garlic, ginger and chilli and add to the pan, slice the spring onions and add too. Let cook for a few minutes then add in the peas and the cooked rice.
  3. Toss then season with a splash of soy sauce. Crack all the British Lion eggs into a measuring jug and pour into the pan on high heat.
  4. After one minute on the heat place in the oven for about 10 minutes, until cooked through but still has a slight wobble.
