- Biscuit:
- 240 grams cocoa powder
- 185 grams flour
- 1/2 baking powder
- Pinch salt
- 375 grams butter
- 300 grams caster sugar
- 165 grams light brown sugar
- 2 large eggs
- 2 egg yolks
- 1 teaspoon vanilla extract
- Frosting:
- 250 grams icing sugar
- 75 grams softened butter
- 20 milliliters milk
- Vanilla extract
Steps
- Cream together the butter, two types of sugars, vanilla extract and salt.
- Add in the eggs and egg yolks. Then sift in the dry ingredients (flour, cocoa powder and baking powder) and mix.
- Grease two fluted tart tins and put the mixture in evenly between the two.
- Place in a preheated oven at 165C and cook for 25-30 minutes and leave to cool.
- Make the frosting by mixing the icing sugar, butter, milk and vanilla together in a mixer.
- Sandwich the cookies together with the frosting.
- Decorate the top with chocolate piping.
