  • Biscuit:
  • 240 grams cocoa powder
  • 185 grams flour
  • 1/2 baking powder
  • Pinch salt
  • 375 grams butter
  • 300 grams caster sugar
  • 165 grams light brown sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • Frosting:
  • 250 grams icing sugar
  • 75 grams softened butter
  • 20 milliliters milk
  • Vanilla extract

Steps

  1. Cream together the butter, two types of sugars, vanilla extract and salt.
  2. Add in the eggs and egg yolks. Then sift in the dry ingredients (flour, cocoa powder and baking powder) and mix.
  3. Grease two fluted tart tins and put the mixture in evenly between the two.
  4. Place in a preheated oven at 165C and cook for 25-30 minutes and leave to cool.
  5. Make the frosting by mixing the icing sugar, butter, milk and vanilla together in a mixer.
  6. Sandwich the cookies together with the frosting.
  7. Decorate the top with chocolate piping.
