Steps
Sriracha Rippled Houmous with Grilled Asparagus
- Preheat the griddle pan
- Snap the woody ends off the asparagus
- Toss in olive oil + season then place on the griddle for 2 mins on each side
- Spoon the houmous into a bowl.
- Serve the houmous with the charred asparagus (other veg too) and sprinkle the houmous with sweet smoked paprika
Coronation Chickpea Salad with Cheese Tacos
- Preheat your oven to 180
- Finely grate 80g mature cheddar + 40g parmesan. toss together.
- Line a baking sheet + put the cheese into 4 circles, around 10-12cm dia.
- Place in the oven for 10 - 12 mins until golden. leave on the tray for 1 min, then carefully lift off with a fish slice and drape over the side of a thick tupperware or mixing bowl. Leave to cool.
- Finely chop coriander. mix into the coronation chickpeas.
- Spoon into the cheese tacos and lettuce cups, finish with more coriander + fresh lime.
