Steps

Sriracha Rippled Houmous with Grilled Asparagus

  1. Preheat the griddle pan
  2. Snap the woody ends off the asparagus
  3. Toss in olive oil + season then place on the griddle for 2 mins on each side
  4. Spoon the houmous into a bowl.
  5. Serve the houmous with the charred asparagus (other veg too) and sprinkle the houmous with sweet smoked paprika

Coronation Chickpea Salad with Cheese Tacos

  1. Preheat your oven to 180
  2. Finely grate 80g mature cheddar + 40g parmesan. toss together.
  3. Line a baking sheet + put the cheese into 4 circles, around 10-12cm dia.
  4. Place in the oven for 10 - 12 mins until golden. leave on the tray for 1 min, then carefully lift off with a fish slice and drape over the side of a thick tupperware or mixing bowl. Leave to cool.
  5. Finely chop coriander. mix into the coronation chickpeas.
  6. Spoon into the cheese tacos and lettuce cups, finish with more coriander + fresh lime.
