Gobi Manchurian

This is hands down the best cauliflower you'll ever eat

Ingredients

  • 1 large cauliflower - broken/cut into about 20 florets
  • 1 cup plain flour
  • 2 tsp corn flour
  • 1/4 tsp black pepper
  • 1/4 tsp turmeric
  • 1/2 tsp red chilli powder
  • 2 tsp soy sauce
  • 1/2 tsp salt
  • Cold sparkling water
  • Rapeseed/vegetable oil for frying
  • 2 tsp vegetable oil
  • 1 onion, finely chopped
  • 2 tsp garlic cloves, finely chopped
  • 1 spring onion, finely chopped - keeping some of the green tops separate
  • 1/2 green pepper, cut into squares
  • 1/2 tsp salt
  • 1/2 tsp red chilli powder
  • 5 tbsp tomato ketchup
  • 2 tsp cider vinegar
  • 2 tsp soy sauce

Steps

  1. Boil the cauliflower for 2-3 minutes then dowse in ice water and drain.
  2. For the batter: mix the flour, corn flour, soy sauce, black pepper, red chilli powder, turmeric and salt.
  3. Add sparkling water until you have a semi-thick batter. The consistency should be like custard.
  4. Dip each floret into the batter and fry in batches.
  5. Drain the fried florets on kitchen paper.
  6. For the sauce: in a large wok or frying pan, fry the onion, ginger and garlic and the oil.
  7. Add the spring onion and the green pepper and cook for another minute.
  8. Add the tomato sauce, vinegar, soy sauce, salt and chilli powder.
  9. Let the sauce reduce until it’s glossy.
  10. Stir the ketchup, mustard and chopped onion.
  11. Add the fried florets and give it a good mix.
  12. Serve and garnish with the spring onion tops.
