Gobi Manchurian
This is hands down the best cauliflower you'll ever eat
Ingredients
- 1 large cauliflower - broken/cut into about 20 florets
- 1 cup plain flour
- 2 tsp corn flour
- 1/4 tsp black pepper
- 1/4 tsp turmeric
- 1/2 tsp red chilli powder
- 2 tsp soy sauce
- 1/2 tsp salt
- Cold sparkling water
- Rapeseed/vegetable oil for frying
- 2 tsp vegetable oil
- 1 onion, finely chopped
- 2 tsp garlic cloves, finely chopped
- 1 spring onion, finely chopped - keeping some of the green tops separate
- 1/2 green pepper, cut into squares
- 1/2 tsp salt
- 1/2 tsp red chilli powder
- 5 tbsp tomato ketchup
- 2 tsp cider vinegar
- 2 tsp soy sauce
Steps
- Boil the cauliflower for 2-3 minutes then dowse in ice water and drain.
- For the batter: mix the flour, corn flour, soy sauce, black pepper, red chilli powder, turmeric and salt.
- Add sparkling water until you have a semi-thick batter. The consistency should be like custard.
- Dip each floret into the batter and fry in batches.
- Drain the fried florets on kitchen paper.
- For the sauce: in a large wok or frying pan, fry the onion, ginger and garlic and the oil.
- Add the spring onion and the green pepper and cook for another minute.
- Add the tomato sauce, vinegar, soy sauce, salt and chilli powder.
- Let the sauce reduce until it’s glossy.
- Stir the ketchup, mustard and chopped onion.
- Add the fried florets and give it a good mix.
- Serve and garnish with the spring onion tops.
