  • 100 grams Cornmeal 100 grams Plain flour
  • Vegetable oil 3 limes
  • 2 Jalapenos 1 Red onion
  • 1 Red pepper 6 Tomatoes
  • 1/2 Cucumber Sour cream
  • 1 Avocado Spring onions
  • Fresh coriander Salt & Pepper
  • 200 grams Freeze dried grasshoppers
  • 100 grams Freeze dried crickets
  • Dash of pomegranate molases

Steps

  1. Bake crickets at 150C with a pinch of salt for 40 minutes. After that they should be dry as old bugs. Blitz them up in a blender and they will resemble flour.
  2. Mix with remaining flour, cornmeal, oil and 150 milliliters of water until it forms a solid dough. Roll into taco shapes and fry to make your bug shells.
  3. Prepare grasshoppers: Dice red pepper, 1/2 red onion, and 1 jalapeno, add grasshoppers and fry on low for ten minutes. Squeeze in lime juice and set aside.
  4. Dice cucumber and tomato, add a squeeze of lime and dash of pomegranate molasses.
  5. Smash avocado, add olive oil, diced spring onion and the rest of the jalapeno.
